Ingredients
Fresh beet greens approximately 2 -3 cups chopped
1 garlic crushed and minced
1/2 onion chopped
1 tablespoon olive oil or coconut oil
1 tablespoon grated coconut
1 green chilly (optional)
Salt to taste
Method.
Wash the beets well and cut the leaves with stems.
Cut the stalks and the leaves separately
Add the oil to a pan and heat. When the oil is hot add the onions and garlic.
When the onion has cooked a little add the cut stalks and stir fry for about 3 minutes.
Now add the greens and the green chilly which has a slit in it.
Cook till the bhaji has reduced in size and the leaves are tender (not mushy).
Lastly add the coconut , stir and remove.
