Vegetarian Cauliflower Buffalo Wings

There seems to be a  new craze for vegetarian Buffalo Wings so I decided it was well worth the experiment . Unfortunately the fats, calories and cholesterol of real Buffalo Wings can be a big deterrent to eating the real thing. After checking out various takes on this vegetarian imitation, I found a way to keep it easy, simple and healthy.
This vegetarian version is packed with all the flavor and can be enjoyed as a snack without the guilt.

Ingredients

1 medium head cauliflower
1/2 -1/4 cup of yogurt (0 Fat)
1 teaspoon garlic powder
1/4 cup buffalo wing sauce ( I used Frank's hot sauce) or to taste

Method

Preheat the oven to 450 F.
Cut the Cauliflower into bite sized pieces or florets.
In a medium bowl mix the yogurt, garlic powder and buffalo wing sauce well. Reduce the amount of Buffalo sauce if you cannot handle the heat .
Add the florets and toss well so all the florets are coated.
Line a baking sheet with foil. Spray or grease the sheet. Spread the cauliflower in a single layer and spray lightly with a cooking spray. Bake for 15-20 minutes or until the cauliflower is slightly browned and cooked but not overdone. Can be served with blue cheese dip or eaten as is.
Enjoy! Tastes great as a pizza topping too!
