Sannas are a traditional bread of Goa, often appearing at the table for festive occasions. For many Goans living overseas, this specialty can only be dreamed of since all the ingredients are not readily available.
Not any more, roll up your shirt or blouse sleeves and have these perfect Sannas on your table. This recipe is so effortless that you can prepare and serve these sannas with pride. It is the best sanaa recipe I have sampled.
It has passed the taste tests of even the most skeptical Goans I have entertained including my own mother.

The rising agent here is Eno's fruit salts, which is composed of 60% baking soda and 40% citric acid. Do not let this put you off, it provides the perfect rising/souring agent to this recipe .

Ingredients
1 cup sooji or semolina (grainy not fine)1 cup plain yogurt ( any kind, I used 0 fat)
1/4 cup water
1 tablespoon sugar
1 heaped teaspoon Eno's fruit salts ( regular not flavored), make sure the Enos is fresh and not stale-dated, or it will not produce the effervescence needed.
1 tablespoonful of grated coconut (I use fine dessicated coconut)
1/4 teaspoon salt
Method
In a large bowl mix everything except the Eno's. Add the Eno's last and mix. The mixture will now look light and porous. Grease the forms lightly first, I use a cooking spray. I also used an ice cream scoop to put the batter in the containers. Steam immediately using an idli maker for 12-16 minutes until firm. I got 12 sanaas from this quantity.Notes: If you do not have an idli maker use small foil tart forms that have been greased and put them in a steamer.

ReplyDeleteMade sanna's for dinner following the recipe posted here some days ago and I must say they turned out yummy and soft.truly difficult to say this is mock version of the original !!! My husband quickly gulped 2 of them as soon as they were out of the moulds ! Txs TGF for posting this lovely recipe.
