Ingredients
3 1/2 cups almond meal (if you are using the almond pulp from a previous recipe, measure it and add more ground almonds to make 31/2 cups)
1 cup ricotta cheese
1/2- 3/4 cup sugar depending on sweetness desired (I used xylitol - 3/4 cup)
2 teaspoons vanilla extract
2 teaspoons lemon extract
4 large eggs
1/4 teaspoon salt
1 stick or 1/2 cup butter melted and brought to room temperature
approx 1/4 cup sliced almonds for the topping
Method
Preheat the oven to 320 F. Line a 9.5 inch spring form pan with parchment paper and grease the pan and lining. Spread the sliced almonds on a wet paper towel until ready to use. This will prevent them from burning easily when baking.
Separate the egg whites and the yolks, keeping the yolks in a larger bowl. Beat the egg yolks with the sugar until light in color.
Add the melted butter, the ground almonds, ricotta cheese, lemon and vanilla extracts and mix well.
In another bowl add the salt to the egg whites. Beat until stiff. Fold the egg whites gently into the almond mixture.
Pour the batter into the prepared cake pan. Smooth the top with a spoon, and sprinkle sliced nuts evenly over the top. Bake for about 40 - 50 minutes until browned. Test with a toothpick inserted into center, when the toothpick comes out clean the cake is done.
