Spicy Black Bean and Corn Salad

This is a colorful , robust salad that is both satisfying and nutritious and loaded with fiber.  It is a crowd pleaser and perfect for entertaining. This could also be eaten as a power packed lunch.

Ingredients



For the salad
1 can black beans drained and rinsed (19 oz)
1 can sweet corn drained and rinsed (12 oz)
1 mango skinned and cut into small cubes
1 firm plum tomato cut into small cubes
1 - 2 green or red hot chillies finely chopped
1 small red onion or half a large one finely chopped
3 cloves garlic minced
2 tablespoons chopped coriander


 Dressing
1 teaspoon cumin
1 teaspoon salt
juice of 2 limes ( I like it tangy)
1 teaspoon olive oil

Method



Put all the salad ingredients in a bowl. Mix well.
In another small bowl whisk all the dressing ingredients together until well blended.  Pour over the salad and toss well to blend.  Leave the salad in the fridge for all the flavors to get absorbed.  Let sit for minimum 1 hour or overnight for best results.
