Lettuce Soup - With a Goan twist

What do you do when you have too much lettuce on hand, and it may even be starting to wilt ?  You can put a pot on the stove and serve up some lettuce soup.  This turned out tasty, light and incredibly filling.  A good way to use up all that lettuce you have on hand, and fill up on nutrition and vitamins.  I used 2 big heads of red leaf and green leaf organic lettuce, but you can use any kind you have on hand.

Ingredients  (serves 10)


2 - 3 large heads of lettuce (any kind), leaves removed, washed and cut into shreds
1 cup sliced onion
3-4 cloves of garlic minced
1 1/2 teaspoon of fresh ginger minced
2 tablespoons olive oil
1 cup chopped fresh coriander leaves
4 cups of vegetable stock
Salt and pepper to taste
1 1/2 cup of coconut milk

Method

Heat the olive oil in a large stock pot.  When the oil is hot add the onions, garlic and ginger and cook till the onions are translucent.



 When the onions are translucent add the coriander and lettuce to the pot.


Stir and cook until the lettuce is wilted



When the lettuce is completely wilted add the stock and bring to a boil.  Let the soup simmer for about 20 minutes.



Remove from the heat and let cool.  When cool enough to handle use a hand-held blender or processor to blend the ingredients.  Using the same pot, add the coconut milk and heat again .


Mix well, serve and enjoy!
