These savory deep fried snacks are traditional to the non- Catholic population of Goa. My mother tells me of times when she was a little girl in Bardez and waited for chakris bought in Mapuca by an aunt on her way to visit from a far away village. These snacks are known for their typical spiral formations and ridged edges. A special chakri maker is used to form these shapes, but since I did not have one I used my cookie maker to get ridged stick forms that tasted just the same.
If you have the chakri maker you can use this recipe to turn out perfect forms, and you can deep fry them as is traditionally done, or bake as I have in this recipe.
Ingredients
1 cup rice flour
1 tablespoon sesame seeds
1/2 teaspoon chili powder
1/8 teaspoon Turmeric powder
1/2 cup yogurt
Salt – to taste
1 tablespoon olive oil
Method
Preheat the oven to 350 F. Line a baking tray and grease lightly.
You can knead all the ingredients together by hand but I put all the ingredients into a food processor and keep it on until a soft dough formed.
Take the dough out. It will form a nice ball.
Put the dough in the chakri maker or cookie maker and finish making the chakris. Place on the cookie tray and bake for approximately 20 - 25 minutes until lightly brown and crisp.
