I have always been a fan of puris. When young I was at the cooker taking first place as taster to hot deep fried delicacies placed on a newspaper or paper towel to drain. However with my aversion to deep frying, I have been experimenting with baking alternatives. These are cookies, not fluffy savory puris, but I used the puri dough ingredients, added sugar and cardamon and baked them to produce this variation. They disappeared as fast as they came out of the oven.
Ingredients
1 cup Atta flour or whole wheat flour
1/4 teaspoon salt
1 tablespoon sugar (or to taste)
3 large cardamon pods peeled and crushed fine
1 tablespoon ghee, or vegan alternative
Oil or ghee for brushing
Water for making the dough
Method
For ease I use a food processor to make my dough.
Put the flour in the bowl of the food processor. Add the salt , sugar and cardamon and pulse to mix.
Add the ghee and pulse till well mixed and resembles breadcrumbs.
Add water a tablespoon at a time and pulse. The dough forms very quickly so do not add too much water at a time. I only used 2 tablespoons of water. Turn the processor on till the dough leaves the sides and forms a ball.
Remove and form into a ball. Put in a bowl. The dough will be soft and easy to handle, with a sweet fragrance. Cover with a wet cloth and let it sit for at least 15 minutes to half hour.
When ready to roll out the puris, preheat the oven to 350 F.
Remove a little of the dough at a time and form into small golf sized balls.
Roll out to form a thin circle. Do not worry if it does not look like a neat circle. This comes with practice and it does not affect the taste. I did not add any flour to roll because the grease from the dough was enough to lubricate the board as I rolled.
Line a baking sheet with parchment paper or foil. Spray lightly with cooking oil .
Lay the puris flat on the tray and spray or brush lightly with cooking oil.
Bake for 5 minutes, then remove and turn over. Spray lightly again and return to oven for another 5 minutes. Watch so it does not burn. The edges will be lightly browned and crisp, and the cookies will be slightly soft in the middle.
Remove and plate. Sprinkle with sugar when hot . Serve with tea, or enjoy on its own.
