Coriander Chutney Hummus

Here is a great twist to Hummus.  If you love the flavors of Goan Coriander chutney, then you will absolutely love this notched up Goan version of the popular Middle Eastern spread.  Serve this as a snack or at your next event and get great taste coupled with a bounty of health benefits.

Serve with crackers, fresh vegetables or spread it on a slice of bread and enjoy!





Ingredients


1- 9 ounce can garbanzo beans ( drained)
1/2 cup fine unsweetened (dried) desiccated coconut 
1 cup fresh cilantro (packed tight), a few stems can also be used  
1 green chilly or to taste 
1 medium onion
Ginger Root, about 1/4 inch
Garlic, 4 cloves 
1/2 teaspoon Cumin seed powdered
1 tsp Granulated Sugar
1/2 teaspoon salt
1- 2 fresh limes squeezed


Method


Put all ingredients into a food processor or blender with 1/4 cup water.  Add more water in tablespoons if too dry and continue processing.  When the mixture is well blended add 1 tablespoon of olive oil and turn processor on.  The hummus will have a lovely green color and a smooth, soft consistency.  Add more lime juice to taste.  Add more olive oil until desired smoothness is achieved.




Spoon into a serving bowl, and drizzle a little olive oil on the top before serving.
