Cauliflower Rice


Cauliflower Rice is a good alternative for diabetics or others who are watching their starch intake for health or fitness reasons, and find it difficult to eliminate rice from their diet.  This alternative is perfect for soaking up curries and other mains that often accompany rice.  The biggest bonus is that you get all the health benefits of cauliflower in addition to increasing your servings of vegetables. Cauliflower Rice served with  roasted Brussels Sprouts



Ingredients


1 large head of cauliflower, rinsed and cut into florets.




Method



Grate the cauliflower using a food processor.  You can do this by hand but it can be a tedious process.





The cauliflower will resemble small grains of rice.   Empty the cauliflower into a micro wave safe dish.  Add a teaspoon of water and salt to taste, and cook on high for 3 - 5 minutes. Remove and check to see if cooked to the consistency you like it.  Do not overcook and make it mushy, unless you prefer it that way.



Remove from the microwave and enjoy with your favorite curries.
