This recipe can be made with fresh or frozen fillets of fish. I love this recipe because it is so simple and I can pull the fish out of the freezer and start to prepare my meal which is ready in 20-25 minutes. The sauce is simple and has a nice creamy kick to it without a lot of calories attached. Add a salad or some cooked vegetables and a tasty balanced meal is served up.
This meal is great for calorie counters and carbohydrate reduced diets. It can be made child friendly by leaving out the hot sauce on the child's portion.

Baked Fish with Roasted Brussels Sprouts and asparagus |
Ingredients
6 oz Fish fillets (any fish like tilapia, mahi mahi, basa or salmon ) - allow 1 per serving
mayonnaise (light version is acceptable)
Sriracha Hot sauce ( or personal preference)
ginger powder
garlic powder
salt to taste
pepper to taste
grated Parmesan cheese (about 1/2 teaspoon per fillet)
Method
Preheat oven to 375 F.
Lightly spray the bottom of a baking dish. Lay the fish fillets on the bottom of the dish (frozen is fine)
Sprinkle with a little salt and pepper. Then sprinkle the garlic and ginger lightly over the fish.
In a separate bowl add 1 tablespoon mayonnaise per fillet of fish. Add enough hot sauce that can be handled. I used 1 teaspoon for 3 fillets. Mix well.
Spread the sauce evenly over the fillets.
Sprinkle with grated Parmesan cheese.
Bake till cheese is nicely browned and the fillets are done. Note that the fish will flake when cooked. This takes about 20-25 minutes if the fillets are frozen.
Plate and enjoy with a fresh salad or cooked vegetables. I have plated the fish with roasted Brussels sprouts and asparagus
