Summer evenings in my neighborhood are filled with the aromas of culinary masterpieces created by aspiring outdoor chefs as they light up their grills and get to work. Almost everyone loves the flavors of an outdoor meal. This recipe for meat skewers is a simple yet tasty favorite in my household. Pair it up with some grilled vegetables and a nutritious well rounded meal is served up. Bon Apetit !
Ingredients
1 pound of beef cut up in cubes
1/4 cup soy sauce
1/4 cup olive oil ( or your choice)
1 tablespoonful corn syrup (optional or use a non-sugar sweetener, I added 1 packet of Splenda)
1 teaspoon hot sauce (sriracha)
1 heaped teaspoon minced fresh (or powdered garlic)
1 heaped teaspoon minced fresh or (powdered ginger )
Method
Place the beef in a glass or ceramic container . Add a quarter teaspoon of salt and pepper and leave aside. Do not add a lot of salt because the soy sauce will add more salt to the final product.
Mix all the ingredients in a bowl and whisk well to mix. Pour over the meat and stir well to make sure all the meat is well coated with the marinade. Cover the dish with plastic wrap and put in the fridge overnight
When ready to cook. Put the meat on skewers and place on the barbecue till the meat is cooked. Baste with the leftover marinade at the beginning and again half way through, and then leave to finish cooking.
Note: I like to cut a mix of peppers and onions, toss them with olive oil, salt and pepper and grill them on the barbecue at the same time. You can use any vegetables you prefer like zucchini, eggplant, carrots, turnips, banana peppers etc
