Paneer is a great source of protein for the Goan vegetarian. Because of its firm consistency it also can be used as a meat replacement for your favorite Goan recipes. The addition of potatoes and peas make it a complete meal. This can be eaten with rice, chapati or bread and is a satisfying comfort food for any time of year.
For a vegan version of this use Firm Tofu, this also reduces the fat and calories in the final dish
Ingredients
450 grams paneer (substitute firm tofu for vegans)
2-3 potatoes cubed
1 cup frozen or fresh peas
2 large onions chopped
3 green chilies roughly cut (less or more to taste)
1 inch piece fresh ginger chopped
4 cloves garlic chopped
2 heaped teaspoon jeera powder
1 teaspoon cinnamon powder
1/2 teaspoon clove powder
1 level teaspoon turmeric
1/2 teaspoon pepper
1 teaspoon salt or to taste
2 tablespoons of olive oil or coconut oil
1 tablespoon of red wine vinegar or other preference
Method
In a bowl combine all the powdered spices. Add vinegar and mix to form a paste.
Heat the oil in a pot on the stove top (or in the pot of the electric pressure cooker ). When hot add the paneer (or tofu) a little at a time and fry till lightly browned. Remove and keep aside.
In the same pot add the onions, ginger, garlic and green chilies. Cook till onions are translucent.
Add the masala paste and cook for a few minutes, stirring so it does not burn.
Add the paneer (or tofu) and stir so masala coats all the pieces and stir fry for a few minutes.
Add potatoes and peas and stir. Add 1 cup of water and cook till the potatoes are done. If using a pressure cooker cover after adding water and lock. Proceed according to manufacturer's instructions.
Dish up and enjoy!
