Broccoli and Potato soup - vegan





Organic Broccoli produced by our local Ontario farmers and freshly delivered to my door begs to be made into a soup.  I have been feeling a little chilly in the house these days and since we are a family that enjoys a bowl of soup at night, I though this would be the perfect solution.  I tend to stay away from the popular broccoli and cheese soups which use whole cream for its smoothness, so I had to get imaginative in preparing this low calorie vegan soup.
I experimented with a little ginger, garlic and Madras curry powder.  I also threw in a fresh red chili and the final product was exactly what we needed to satisfy our palates.  The soup looked so hearty that I refrained from blending it at the end and served it with the vegetables intact, and a squeeze of lime juice at the very end.
I made this soup in an electric pressure cooker, but it can be easily done on a stove top or slow cooker.


Ingredients


1 large head of broccoli ( washed and trimmed, keep chopped stems separately from florets)
4 medium potatoes peeled and diced
1 large onion chopped
1 teaspoon chopped fresh garlic ( or ground spice)
1 teaspoon chopped fresh ginger ( or ground spice)
1-2 red chilies slit (optional)
1 teaspoon Madras curry powder ( or your favorite blend)
5 cups of vegetable broth
1 teaspoon coconut oil or olive oil
salt and pepper to taste
1/2 fresh lime juiced


Method


Step 1
Put the oil into the pot of the pressure cooker or stove top pan.
When the oil is hot add the onions, chopped broccoli stalks, ginger, garlic and chilies.  Stir fry until the onions are soft and translucent.

Step 2
Now add the broccoli florets, potatoes, the madras curry powder and about 1-11/2 teaspoons of salt (or to taste)and stir to mix for a few minutes.


Add the broth and stir. Bring to a boil and cook until the potatoes are fully cooked.  Taste and add more salt if needed

When cooked squeeze the lime juice into the soup, stir and serve hot!

Note: For the electric pressure cooker -After following step 2, hit the button for soup on the pressure cooker and adjust time to 18 minutes. Cover and lock until cooking is finished
Soup for two dished up!
