This refreshingly crisp and spicy white radish salad is prepared with simple ingredients but delivers a nice alternative to green salads. A healthy portion can also be used to dress up sandwiches or top off burgers to add a new twist to these favorite foods. You can find mula in the grocery store under the name of Daikon or White Radish.
Ingredients
500 g mula
1 tablespoon dry chili flakes(or to taste)
juice of 1fresh lime ( or 1 tablespoon vinegar)
1 teaspoon sugar
1 teaspoon salt
1 teaspoon sesame oil
1 tablespoon olive oil or other vegetable oil
1 teaspoon toasted sesame seeds
1 tablespoon toasted crushed peanuts ( for garnish)
Method
Wash and clean the Mula. Peel the outside with a potato peeler .
Shred the Mula using a food processor or grater
Add a teaspoon of salt. Mix well and place in a colander to drain. Leave aside for about 15 minutes.
Squeeze the water out of the mula as much as you can. I did this in handfuls and squeezed the water out.
Place the drained mula in a container. Add the sugar , sesame oil and vinegar and stir well to mix.
Heat a tablespoon of olive oil. When hot remove from the heat and quickly throw the red pepper flakes into the oil and shake it gently. Pour this into the mula and mix well.
Now add the roasted sesame seeds and mix. Put this into a serving dish and garnish with roasted crushed peanuts (optional)
Let the salad sit for at least half an hour to absorb all the flavors.
