Have you ever had someone stop by at teatime and wish you had something special to serve? Here is that quick fix that takes as long as the baking time on the box which varies from 25 - 40 minutes depending on the mix.
I used a Red Velvet Boxed mix only because it is my personal favorite but you could use any kind of cake. The moral of the story is to always have a few Cake mixes handy in your pantry. They are ideal for efficiently preparing a sweet something on short demand.
For grandparents out there here is a perfect project to do with your little ones when they visit. The addition of fruit instead of sugary icings make it a win-win delicacy!
Ingredients
1 boxed Cake mix ( I used a Betty Crocker Red Velvet cake)
1 pear, or any fruit you have on hand like sliced bananas, apples, berries etc
Method
Preheat your oven to the temperature shown on your boxed mix. For me it was 350F
Line an 8 inch spring form pan with parchment paper. Spray lightly with a kitchen oil, or grease with margarine or butter
Cut the pear in half, core out the seeds. Place the pear with the cut side down and slice.
Layer the slices decoratively in a spiral on the bottom of the spring pan.
Prepare the cake according to the directions on the box and pour over the pears. Bake according to the instructions on your box.
Check with a skewer or tooth pick that the cake is cooked.
Note: Push the skewer to the bottom of the cake in the middle, when removed the skewer should come out clean. There will be no sticky batter on the skewer.
Remove from oven and let cool completely.
Remove the outer ring of the pan. Gently cut the top of the cake horizontally so that it is flat. Turn upside down on a plate, and enjoy your creation!!
