Cilantro Pesto








Ingredients


¼ cup olive oil
¼ cup almonds
1-2  clove garlic, peeled
1 green chili optional (seeds removed if you do not want it too hot)
1 bunch of cilantro ( fresh coriander) washed - about 4 cups loosely packed cilantro leaves and  stems
¼ teaspoon salt 
juice of 1/2 lime





Method


Put all the ingredients except the cilantro and lime juice into the blender and pulse until thick and liquified. 



Cut the cilantro into 4 sections.  Add the cilantro a section at a time. Blend until all the ingredients are blended. Scrape down the sides of the blender as needed. Lastly add the juice of the lime and blend to mix well.


Taste to see if more salt or lime juice is needed. 

Boil any pasta of choice according to manufacturer's intructions.  Add pesto and mix well.  Serve warm with chille flakes and slivered almonds if you like.
