It has been a while since I have blogged any new recipes. However, I just had to pass this incredible recipe on to any garlic lovers out there. This is a very simple recipe that can be enhanced with a variety of spices or additions that can include personal favorites. The basic ingredients are garlic, olive oil and salt.
Garlic Confit is a fancy name for roasted garlic in olive oil. The preparation is simple but the applications are limitless.
Spread some on toast and enjoy with a little butter. Add it to a Charcuterie Board, and your guests will rave. Add it to your gravies, and the list goes on and on.
Ingredients
Peeled fresh cloves (as many as can fit on the base of a small, oven proof dish). My dish was 7.5 by 5 inches.
Olive oil
salt to sprinkle over the garlic (I used 1/4 teaspoon for my dish
A few fresh sprigs of rosemary
2 dried chilies from my 2023 garden, or you could use chili flakes
3-4 whole peppercorns
Method
Layer the Garlic in your dish, add all the ingredients
Pour enough olive oil to cover all the garlic
Cover the dish with a lid or foil so it does not splatter. Put in a preheated oven at 400 F, for 40 - 50 minutes until golden brown. Remove carefully so you do not spill any hot oil on your self.
Cool completely and use right away, or bottle for later use. Make sure the garlic is completely covered with oil in your jar. Refrigerate.
