Avocado Paratha

 

This recipe was an instant hit. Easy to prepare and great for breakfast or as a tea time snack. I do not remember where I picked it up from, but it still remains in my collection. The dough has a beautiful green color and is made for Avocado lovers.


 


Ingredients 


    4 small or 2 medium Avocados
    juice of 2 full limes 
    1 small tomato
    Garlic, 2 tbsp minced
    1 jalapeno pepper finely chopped,  (1 Serrano pepper or to taste)
    Cilantro, 3 -4 tablespoons chopped
    1/2 tsp. Cumin Powder (also called jeera )
    Olive Oil 1 tsp
    salt - sea salt - 1 tsp
     Atta (wheat) Flour, 3.5 cup (I used Golden Temple Durum Brand)


Directions

Blend the avocado, tomato, lime juice, salt, garlic, chilly, cilantro, cumin powder and oil gently. The avocados must be mashed to a smooth paste.

Add flour a little at a time and mix till you have a smooth dough that leaves the sides of the bowl and is not sticky. I used a stand up mixer.


Cover the dough with oil when ready and let stand for about 20 minutes covered with saran wrap.

Give the dough one more quick knead and make about 18 small balls. Roll these out on a gently floured board, to look like circles (small tortillas). As you can see mine were not perfect circles!

Heat a non-stick pan on medium heat, and when hot put the paratha in and rotate so it does not stick, flip and repeat till it is cooked. Small brown spots will appear when done.When it is ready remove and keep warm.
