Easy Beer Bread with olives, jalepenos and cilantro

Utensils
1 large mixing bowl.
1 loaf pan
A whisk
A spoon or spatula for mixing

Ingredients
3 cups all purpose flour
4 teaspoons baking powder
3/4 teaspoon sea salt
1/2 cup sugar ( I used half splenda/half sugar)
1/4 cup olives, chopped or sliced
1/4 cup chopped jalapenos (canned) or to taste
2 tablespoons chopped fresh cilantro
1 bottle or can of beer (12 ounces)

Method
preheat oven to 350 F

Mix the first 3 ingredients in a large bowl and whisk well to mix. You can also sift to ensure all ingredients are well blended.
Add the sugar.
Add the olives, jalepenos and cilantro and mix until blended.
Add the beer and stir till well mixed.
Put into a greased loaf pan.
Bake for 45 minutes. I used a convection oven.

Notes
You can substitute 3 cups of self-rising flour for the first 3 ingredients.
You can add any other ingredients like cheese, sunflower seeds etc.
Great on its own, or with a hearty bowl of soup in cold weather.

  1. Talk about good timing! Coming home just as the bread was done, warm out of the oven. The aroma which greeted me at the door put a smile on my face. That bread was so delicious!
    Thanks!

  4. Enjoyed flipping thru your recipes and have copied some of them. Like the way you gave them a healthy twist to make them vegetarian. Also preferred your baking ideas instead of deep frying. That's awesome. Well done! Will let you know when I start trying your recipes. God Bless.
