Cauliflower cutlets

This recipe is not only full of nutrition and flavor, but it is also simple and quick to prepare.  This can be served with a salad or in a sandwich for a nice light lunch.

Ingredients 


1 small to medium cauliflower ( about 2 cups of florets)
1 egg
1 tablespoon chopped onions
1 clove garlic chopped
1 teaspoon chopped ginger
1 green chilly chopped
1/2 teaspoon geera
1 teaspoon lime juice
2 heaped tablespoons parmesan cheese
1/2 teaspoon sea salt(or to taste)
1/2 teaspoon freshly ground black pepper
a handful of coriander chopped


Method


Put the florets in a microwave safe dish. Add 3 tablespoons of water and cook on high for about 10 minutes until the cauliflower is cooked and soft. Leave to cool.
Preheat oven to 425 F.
In a food processor or blender, add the cauliflower, and all the ingredients except the cheese, salt and pepper.  You can mash the cauliflower by hand if you prefer.
Process till smooth, a little texture is okay.  Add the salt pepper and cheese. The mixture will look like a soft dough. Form into small balls using about a tablespoon of mixture. Flatten like cutlets and place on a lined and greased baking tray.  Spray lightly with oil.  I got about 10 cutlets from my mixture.
Bake till nicely browned and firm, about 10-15 minutes.

Blend, mash or process

Remove from blender

Add cheese, coriander, salt and pepper

Form into cutlets

Bake till browned

  2. My search for new vegetarian recipes continue and its Cauliflower Cutlets by Lisette Saldanha. Except I shallow fried them. It's super easy, healthy and tasty.
