Ingredients
1 cup raw cashews (not roasted and unsalted)
1/2 cup granulated sugar
60 ml water or 5 tablespoons
4-6 ground cardamons
Method
Throughout the procedure microwave in one minute increments at full power where indicated. Do not try to cook for more than one minute at a time before removing and stirring. The mixture cooks very quickly.
Grind the nuts in a grinder. I used my Magic Bullet. Do not add any liquid.
In a microwave safe dish add the water. Now add the sugar
Add the ground cashews. Stir and mix well until there are no lumps. Put into micro for 30 seconds. Remove and stir. Back again for 30 seconds. Remove and stir well.
Back for another minute. Remove and stir.
After a total of 2 minutes from the start it should start bubbling. This may vary depending on your microwave. At this stage after stirring add the cardamon and stir to mix.
Put it back for another minute. Remove and stir.
Another minute or more and when you stir it the mixture will leave the sides, and be able to hold its shape when pushed to the middle. Remove at this point.
Turn the mixture out on to a greased parchment paper.
Cover the mixture with another greased parchment paper. Using a rolling pin smoothen the mixture. It will be hot.
When cooler cut into diamond shapes and enjoy. Allow to cool completely. The toffee will harden, and will be easier to handle.
I managed to get 40 pieces.
