Goa Sausage Pilau - Made in the Rice cooker

I am a big fan of the rice cooker.  It works well for me and produces perfect rice every time.  My first Rice Cooker was a gift from my parents when I got married, and has been a life line in my kitchen ever since.

Ingredients


1 big onion diced
2 large tomatoes diced
3 cloves garlic minced
1 teaspoon salt
1/4 teaspoon black pepper ground
1 teaspoon olive oil

2 cups Basmati rice rinsed till water runs clear. Soaked in cool water for at least 10 minutes.
1/2 to 3/4 pound of Goa sausage meat.


Method





Put all the ingredients except for the rice in a microwave safe dish. Stir well and microwave for about 10 minutes until the onions and tomatoes are soft and cooked.  Remove and strain the liquid. Keep aside.
 

Rinse the rice till the water runs clear.  Let the rice soak in fresh, clean water for at least 10 minutes before cooking.





Spray the rice cooker pan with oil.
Rinse and drain the rice.  Add to the Rice cooker.  I add another teaspoon or more of salt at this time,  as per your own taste. 
Add the cooked tomatoes and onion mixture to the rice and stir to mix.  Now add the sausages and mix well.





  Add water to the reserved cooking liquid from the tomato/onion mix to get 3 cups of liquid.  Add the liquid to the rice cooker.  Note: My Rice Cooker asks for 1 more cup of liquid than the quantity of rice.  If your cooker is different, then follow your manufacturers instructions. 

Garnish with smoked sausage and coriander  (optional)
