Potato Chops - vegetarian




Potato chops used to be my husband's favorite dish before he became vegetarian. Potato chops as a meal is a favorite with everyone including kids.  As a child I would eat my chops with a good helping of ketchup, but as I grew older I replaced the ketchup with my favorite hot sauce.

This is a great substitute for meat eaters during Lent.



Ingredients


Mock vegetarian Minced meat recipe ( vegetarian "mock" minced meat ) or click the link

mashed potatoes, cooled
1 egg lightly beaten
approx 1/2 cup breadcrumbs
oil for shallow pan frying








Method



Grease the palm of your hand with butter.  Take a small ball of mashed potato and flatten in the palm of your hand.  Put a heaped teaspoon of "mock" minced meat in the middle


Pull the sides of the mashed potato circle to meet over the mock meat.  Seal the edges by pressing down and form a ball. 


Finish making all the balls to this point before proceeding


Next coat the ball with beaten egg.


Next coat the ball in breadcrumbs by gently rolling it in the plate with breadcrumbs.





 Use the flat side of a knife to gently pat into shape. Flatten the top and the sides to from a "puck" shape

 Continue until all chops are ready to fry.


 Add enough oil to coat the bottom of a shallow frying pan.  When hot add the chops and fry till lightly brown, turning over so that both sides are browned.



Remove to a plate lined with paper towels.  Serve hot.

  2. Chris I have been experimenting with various produce to get a vegetarian filling to replace the minced beef we use without loosing the taste or consistency. I finally got a success with brown cremini mushrooms and the spices my mum used for mince. I gave mum a couple without telling her they were vegetarian and she loved them, and praised my mince filling! (Fooling mum means a good grade) I blogged the recipe - Goan basic minced meat (vegetarian0 2 blogs ago on May 27. I feel privileged you raed my blog...and even more honored to receive a comment

  3. Ive tried potato chops with soya granules...u cook the filling the same way u cook mince...they taste gd...

    1. I used to use soy granules but I now use fresh produce wherever I can. The mushroom base retains the flavour much better - but whatever works for you is best

  4. Love your step by step instructions. I was just pondering...do you think it would work with fish. Oscar has made Alebeles with a fish filling and they taste so good. Not sure how potato chops would taste with a fish filling.

    1. Doris I am sure fish would work just fine... Give it a go, you have nothing to loose. I have tasted potato chops with a prawn filling, they are very good too.
