Ingredients
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup of butter ( at room temperature)
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 egg (large)
1 teaspoon vanilla extract
3/4 cups white chocolate mini-chips
1 cup roughly chopped Macadamia nuts. Do not mince, but leave nice bite-size pieces
Method
Preheat oven to 375 F.
Mix the flour, baking soda and salt in one bowl
Beat the butter with the sugars with a mixer at medium speed until it is light and creamy. I used my stand-up mixer, but a hand held mixer is just as good.
Beat in the eggs and vanilla next until well mixed.
Reduce the speed of the mixer and add the flour a little at a time until all mixed in. The dough will be stiff and harder to stir. If you are using a hand held mixer you may want to switch to a wooden spoon if the dough resists the blades of the mixer.
With the mixer still at low speed add the nuts and chocolate chips until well mixed in. You will have a stiff cookie dough by now.
Using a teaspoon take even measures of the dough and drop on a parchment lined cookie sheet
Bake for about 10-12 minutes until slightly browned . Remove and let cool. They will harden as the cookie cools down.
Brew a cup of tea or coffee, sit back and enjoy. These cookies will take you back to your childhood !
