At a family breakfast this morning I was expressing my concern over 4 pounds of organic carrots sitting in my pantry and discussing my plans to utilize them in a carrot cake. No sooner had I expressed my thoughts when I was overruled by my husband and sister who are carrot halwa fanatics.
The very thought of the constant stirring over the cooker made me sweat mentally. I got home and decided that I would please everyone by experimenting with a microwave version which worked out so well that I have decided to share it with all carrot halwa lovers.
A great way to get all the benefits of this vegetable in a sweet presentation.
Ingredients
2 pounds carrots washed
11/2 can evaporated milk (12 ounce can), or vegan substitute
1 cup sugar
2 teaspoons ghee or butter or margarine
6-8 cardamon pods peeled and ground
1/2 cup chopped Cashew nuts (optional)
1 - 2 tablespoons of Raisins (optional)
Note: You could use almond or cashew milk, just expect the cooking time to be longer as the liquid will need more time to evaporate
Method
Peel and grate carrots. Use a food processor for ease.
Put the grated carrots in a large microwave safe dish.
Add the evaporated milk and stir well.
Put the dish in the microwave and cook on high (uncovered) for 10 minutes. Remove and stir.
Put back in the microwave for 20 minutes, removing and stirring every 10 minutes. Add the sugar and crushed cardamon and stir well to mix. Put it back in the microwave for 10 minutes on high. Removing and stirring after 5 minutes. The liquid will have started to evaporate by now and should start to look like the picture below.
Remove. Stir and add the ghee, raisins and nuts. Stir well. Microwave on high for 5 minutes increments till it can be pushed to the middle to form a ball like below. The timing will vary depending on your microwave.
When the halwa is ready, spread it in a dish and smooth the top. Arrange crushed or whole nuts on the top for decoration (optional). Let cool before eating. Can be refrigerated before serving, or eaten slightly warm depending on your preference.
