Lime Yogurt Cake


 A simple citrus-y, refreshing cake for any occasion.  I loved the simplicity of the recipe.  The cake has a lovely lime essence to it and is neither dense or light, but has a very nice texture. I am enjoying it with a nice cup of tea as I write the final notes on my blog....need I say more....


Ingredients



1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon  salt
1 cup sugar
1 tablespoon finely grated lime zest
3/4 cup yogurt
1/2 cup olive oil or any preferred oil
2 large eggs
1/2 teaspoon vanilla extract


Directions


Preheat oven to 350°F.

Line a loaf pan with parchment paper and lightly grease with oil ( use a kitchen spray for ease)

Whisk the all-purpose flour, baking powder, and salt in a bowl.
Add the sugar and lime zest to another bowl.  Rub the ingredients lightly to blend and infuse the sugar with the lime zest.
To the sugar mixture add the yogurt, oil, eggs and vanilla essence.  Whisk to blend. 

Fold in dry ingredients just to blend.
Pour the batter into the loaf pan and smooth the top. Bake until top of cake is golden brown and a toothpick inserted into center comes out clean.  About 40 minutes in a convection oven. Let cake cool in pan on a wire rack.  Cut when completely cool.
