Sweet Potato soup

Sweet potatoes are delicious and full of fiber and nutrition.  For this soup, I have added sweet spices to complement the sweet flavors of the potato.  Although I have added chili powder to the soup, this can be omitted if serving young children.  If you like a kick to your soups like I do, then you can add a bit of chili sauce to individual bowls as tastes indicate.  Bon Appetit !


Ingredients


1 pound sweet potatoes peeled and roughly chopped
5 cups broth ( vegetable or chicken)
salt to taste
1/4 teaspoon black pepper
1/4 teaspoon cinnamon powder
1/4 teaspoon clove powder
1/2 teaspoon allspice powder
1/2 teaspoon hot chilli pepper (optional)
1 cup coconut milk


Method


Spray the bowl of a slow cooker.
Add all ingredients except the coconut milk.
Cook on low for 2 hours until potatoes are soft.

Add the coconut milk in the last fifteen minutes of cooking.

Stir well. Allow to cool slightly and then blend all ingredients.  A hand held mixer can be used, but be careful if liquids are hot.  Do not get burned because of  splashing liquids.  Add more salt if needed.
