One of my favorite comfort foods is a nice Pot Roast with thick crusty bread. Add to that root vegetables and the right spices and any mood can be lifted. I prepared this pot roast in my electric pressure cooker but it can easily be done on a stove top.
This is the perfect recipe for those cooler days of Fall. I could dig into a pot roast any time of year, just be sure to have a lot of crusty bread on hand to soak up all those rich flavors!
Ingredients
1 pound of beef Roast ( lightly salted and kept aside in a glass or ceramic dish)
2 cups roughly chopped onions
about 1 tablespoon Goan dried Red chilies, broken into pieces with seeds
4 potatoes cut into big cubes
3 large carrots cut into chunks
1/3 cup red wine
1/4 cup water
Marinade
2 tablespoons red wine vinegar, or any other strong vinegar3 teaspoons ginger finely chopped or minced
3 teaspoons garlic finely chopped or minced
1 level teaspoon turmeric
1 /2 - 1 level teaspoon chili powder ( to taste)
1 level teaspoon cumin
1 level teaspoon paprika
1 level teaspoon ground cloves
1 level teaspoon ground cinnamon
1/2 teaspoon ground black pepper
Put all the marinade ingredients in bowl, add 2 tablespoons of vinegar and mix to a nice paste. Apply the marinade to the meat and rub all over with the back of a spoon. Using a skewer or a sharp pointed knife, pierce the meat all over so the marinade can penetrate below the surface. Leave in the fridge overnight and continue the cooking process next day.
Method (electric pressure cooker method)
Plug in the electric pressure cooker.
Step 1
Add oil. When hot add the Red Chilies and the onions and cook till the onions are soft. Remove with a slotted spoon.Step 2
To the hot oil add the marinated meat and sear on both sides till nice and brown.Step 3
Now add the wine and water to the pot. Add back the onions and any other vegetables.Close the pressure cooker and lock the lid in place. The cooker will take care of the cooking process and will alert when the meal is ready and pressure can be released. This process takes about 40 minutes in the pressure cooker.
Method for stove top.
Do all steps in a pan on the stove top. Check for desired "doneness" of the meat and that the water does not dry out in the pan. Add more liquid as required.
