A very simple Goan Red Chicken Curry that can be cooked bone-in or boneless, and can be made pungent or mild depending on personal tastes. You can substitute ready made ground spices for any spice and eliminate the chili powder for children or for milder curries, substituting instead the paprika to add the rich red color of this curry. Add potatoes and any other vegetable of choice and enjoy with rice, chapati or naan.
Ingredients
1 pound chicken cut into bite size pieces ( I used boneless thighs)
1 large onion chopped
2 large tomatoes cubed ( or 1 tablespoon tomato paste)
1 teaspoon chopped fresh garlic
1 teaspoon chopped fresh ginger
1/4 teaspoon ground black pepper
1/2 teaspoon turmeric powder
1 level teaspoon cloves
1 level teaspoon cinnamon
1/8 teaspoon mustard
1 teaspoon chili powder ( use all paprika for mild or child friendly cooking)
1/2 teaspoon paprika
1 -2 teaspoons of vinegar
3 teaspoons olive oil or coconut oil
Method
Prepare the chicken and place in a glass or ceramic container. Add salt to taste, ginger and garlic. Mix well and set aside.
In a small bowl measure out all the dry spices. Add the vinegar to form a smooth masala paste. Mix well.
Note: If using tomato paste add to the masala paste and mix well.
Step 1
Add oil to the pot, when hot throw in the onions and fry the onions till translucent. Add the tomatoes and cook till soft. Now add the masala spice and cook for a minute.
(For the electric pressure cooker: Turn on as per your cooker's instructions and follow step 1)
Step 2
Finally add the chicken, stir well. add the vegetables and 1 cup of water . Cook till the chicken and potatoes are done.
( For the electric pressure cooker, cover the cooker and lock after step 2 after adding the water. The chicken will complete cooking on its own)
