Basic Ground Beef in minutes (microwave version)




A quick method to making ground beef that can be made in a large quantity and frozen in batches for use in alebele, samosas, patties, and potato chops.  It is also a perfect companion to rice.  I like to add a lot of vegetables to the mince if I am serving it for a family meal so that a nice healthy serving of vegetables is consumed. Peas, corn, carrots, green beans, chopped cauliflower are just some additions as well as diced potato (including sweet potatoes or yams)

Cooking in the microwave removes the need to add oil thereby reducing calories in the final product.


Ingredients


1  pound ground beef ( I use extra lean beef)
1 large onion
1 lime
1 heaped teaspoon ginger powder
1 heaped teaspoon garlic powder
1 green chilly seeded and finely chopped
1/2 teaspoon chilly powder (or less depending on how hot you like your food)
1 heaped teaspoon ground coriander
1 heaped teaspoon ground jeera
1 level teaspoon ground clove
1 level teaspoon ground cinnamon
1 heaped teaspoon of salt or more to taste
1/2  cup or more frozen or fresh peas
chopped fresh coriander for garnish (optional)

Method


Put the meat in a microwave safe dish.

Use a fork to gently break the meat up so as to separate the mince.
Add all the ground spices. Add the juice of one lime.
Use the fork to mix the spices in to all the meat.
Chop the onion and the green chilly and add.
Mix the ingredients well.
Do not add any water or oil. Place the covered dish in the microwave.  Cook on high power for 5 minutes.
Remove and stir.  Once again break up any clumps of meat.  Put the dish back again for another 5 minutes on high power.
Remove and stir.  Your meat will be cooked at this point depending on your microwave, you could cook for a few more minutes if it is not fully cooked as yet.
Now add the frozen peas or fresh and return to the microwave and cook till the peas are fully cooked and not raw.  About 2-3 minutes.

Remove and stir so the peas are equally distributed.
Enjoy with plain boiled rice, or accompaniment of your choice!
