Meat Pilau






I love simple meals so I have adapted this pilau for the rice cooker and micro wave.
I did the initial cooking of the meat in the microwave and then transferred to my rice cooker. The final product was tasty and ready in less than half an hour. I used an ordinary long grain rice but I would recommend using basmati rice if I was doing this for company.  Because of the cooking method the only oil used is to grease the pot of the rice maker thereby considerably reducing the calories from fat. Although you can use any meat for this recipe I used lean pork

Ingredients


For the meat

1 1/2 pounds meat ( beef, chicken, pork or mutton)
1 teaspoon ground ginger spice
1 teaspoon garlic spice
2 heaped teaspoons ground geera
2 heaped teaspoons ground coriander
1 level teaspoon turmeric
1 level teaspoon ground black pepper 
1/2 teaspoon or more chilly powder (or to taste)
1 large onion
2 large tomatoes
1 lime juiced
salt to taste ( I added 1 teaspoon full)

For the rice

1 level teaspoon clove powder
1/2 teaspoon ground black pepper
1 level teaspoon ground cinnamon
1 level teaspoon ground cardamon
1 level teaspoon turmeric powder
1 curry leaf
salt to taste (I added another heaped teaspoon)
2 cups of long grained white rice

Rinse the rice till the water runs clear. Drain and add fresh water to cover the rice and leave aside for half an hour.

While the rice is soaking, cut the meat into 1 centimeter cubes

Put the meat into a microwave safe container.

Add all the ground spices from the first listing.  Squeeze the juice of one lime into the meat and mix well.



Chop the onion roughly and dice the tomato.  Add to the meat.

Stir well.  Cover the dish and cook on high for 5 minutes in the microwave. Do not add water.

Remove, stir and return for another 5 minutes. Add water only if the meat is dried.  This should not happen because the onion, tomato and meat release enough liquid to keep the meat moist.

The meat will be cooked and will smell fragrant at this time.  Taste and add more salt or lime juice as needed.

At this stage I use a rice cooker.

Lightly spray the pot of the rice cooker with oil.  Remove the meat with a slotted spoon and place in the rice cooker leaving the liquid aside so it can be measured.

Drain the rice and add to the rice cooker together with all the ingredients for the rice.

Stir gently so as not to break the rice grains.

Measure the liquid from the meat and add enough water to make 3 cups of liquid.  Add this to the rice and meat and stir gently.

Turn your rice cooker on ( follow steps that your manufacturer has outlined for making rice in your brand of rice cooker).

When the cooker turns off.  Use a fork to gently flake the rice to avoid any clumping.

Place in a dish and serve with chopped fresh coriander on the top (optional).
