Cranberry Almond granola bars






These bars are perfect as snacks or a quick pick-me-up after a workout. Made with all natural ingredients and being totally egg and dairy free they are a also perfect for a gluten free or vegan diet. If you are allergic to nuts you can always leave them out.


Ingredients


1 cup of chopped dates
3 cups of oats
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 tablespoons baking powder
1 cup fresh or frozen cranberries
1/2 cup sliced almonds
1 large soft banana
11/2 cups cranberry juice
1 teaspoon vanilla extract


Method


Preheat the oven to 375 F

Line a pan with parchment paper. My pan was 9 by 12 inches. Do not use a larger pan because the bars will not have enough height. Grease the lining of the pan and the sides

Using a large bowl, add the  oatmeal, cinnamon, nutmeg and baking powder.  Use a whisk to stir so that all the ingredients are well blended.



To the large bowl add the dates, cranberries and nuts and stir to mix.


In another bowl mash the banana well. Add the cranberry juice and vanilla essence and mix well.



Now add the liquids to the larger bowl with the oatmeal and blend well with a spatula.


Pour the mixture into the lined baking pan and try to smooth the top with the back of the spatula.

Bake for 30 - 35 minutes until the sides leave the pan and a toothpick inserted in the middle comes ot clean.

Leave the pan to cool for at least 15 minutes before slicing into  bars
