Lemon Cardamon Cake (Baking for Dummies)


This cake is so easy to make and I have simplified it over the years so the preparation time is just a few minutes. It is so simple to bake that I made a few batches that I shared with friends and family during this time of isolation.  The cardamon gives it a lovely fragrance and flavor, but if you are one of those rare people who do not like cardamon feel free to leave it out.
Tip: I always have a bottle of lemon extract in my pantry which I use whenever lemon zest is called for since I may not always have fresh lemons on hand.


Ingredients

Dry ingredients
1 1/4 cup all purpose flour
1/4 cup ground almonds
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cardamon 

Wet Ingredients
2 large eggs
1/2 cup vegetable oil (I used olive oil since it is the only oil I keep on hand)
3/4 cup yogurt
1 teaspoon Vanilla extract
1 teaspoon pure lemon extract



Method

Preheat the oven to 350F
Line a loaf pan with parchment paper. Spray gently with a kitchen oil spray, or grease the lining and the sides of the pan.

Put all the dry ingredients into a large mixing bowl and using a whisk , stir the ingredients so they are all well mixed


Put the wet ingredients into another container and using a fork whisk well so all the ingredients are well blended. 

Pour the wet ingredients into the bowl with the dry ingredients and mix until the dry ingredients are no longer visible and a nice cake batter is formed. Pour into the prepared loaf pan.

Bake for 40 -45 minutes until a toothpick inserted in the middle comes out clean.  My cake usually takes 40 minutes in a convection oven.

Remove and let cool before slicing.  Enjoy!

  1. If I don't have a loaf pan, could I bake it in a 9 inch round cake tin?

    1. Yes Dominique you can. Just check on the cake after 35 minutes to see if its done. It may alter the cooking time, that's all.
