Old Fashioned bread pudding

Bread pudding is one of those overlooked desserts that needs to be appreciated more. It was one of my dad's favorite puddings, and although I have a very elite bread pudding in my blogger archives, I decided to do the simple, old-fashioned bread pudding today.  In my world bread pudding is an old time comfort food that never looses its appeal.

Never ever throw out stale bread instead cook something with it. For this recipe I like the bread to retain its structure, so it is not soggy or soft. I used sour dough bread that I had on hand but you could use any bread you have on hand. 

You can serve this with ice cream or whipped cream, but we love to eat it warm and as it is with a hot cup of tea or coffee.

Ingredients 

6 cups of bread cubes 
2 cups of milk 
 2 eggs lightly beaten 
1/4 cup butter 
1/2 cup sugar 
1 teaspoon cinnamon 
1/4 teaspoon nutmeg 
1/4 teaspoon salt 
1 teaspoon vanilla essence

Method

Heat the milk and butter on medium heat till the butter melt.  Leave aside to cool.

Preheat the oven to 350 Fahrenheit

Grease an 13 inch by 10 inch dish.  Put the bread in the dish. 

In a bowl mix the eggs, sugar, cinnamon, nutmeg, salt and vanilla essence.  Pour this over the bread cubes and toss well with a spoon to mix the liquids evenly on all the cubes. Now try to layer the cubes evenly in the dish.



 
Finally pour the cooled down milk mixture evenly over the bread



Bake in the preheated oven for 40 - 45 minutes until nicely browned and firm. The sides should be able to leave the dish cleanly.  





This generously serves 12.
