Flat Bread made with Besan Flour (Chickpea flour)



While scouting the internet for regional cooking around the world, I came across several versions of a chickpea flatbread that could have been from our very own Indian cuisine.   It has many names depending on the region in Europe that it comes from - Socca, Farinata, torta di Ceci, and cecina.
This is another valuable recipe for diabetics, low carb and gluten free diets.
I adapted the recipe to the Indian kitchen by adding coriander, Serrano chillis and red onions.  It is a soft flatbread and very flavorful and satisfying.
This is also a nice accompaniment to any meal, or even served as an appetizer.

Ingredients


2 1/2 cups chick-pea flour  (also called besan, gram or garbanzo flour) 
1 teaspoon salt 
1/2 teaspoon black pepper, or to taste
1/4 teaspoon chili powder (optional)
3 1/2 cups fresh cold water
1/4 cup extra virgin olive oil
1 red onion thinly sliced
a handful of fresh coriander chopped finely
a fresh green chili diced (leave out for younger children)



Method


Measure out the first four ingredients into a large bowl.  Whisk to mix.
Add the cold water slowly into the middle of the flour while whisking well with other hand.  Keep doing this until all the water is used up.  This helps prevent lumps and serves to achieve a nice smooth batter.  Add the olive oil and continue to mix well.  Leave the batter on the counter for 6 -8 hours or overnight.

When ready to cook. Preheat oven to 350F. 

Add the fresh chopped coriander and green chili to the batter and whisk to mix.

Use a cookie sheet with a 3/4 inch ledge. Add 2 tablespoons of olive oil and spread evenly.  Pour the batter (1/4 inch layer) into the pan and lay the onions over it scattered nicely to cover it.  Bake for about 30 minutes till browned, leaving the sides and firm.  Careful when placing the tray in the oven because the batter will be runny.

Remove when done and cut into serving sizes.  I got 12 large pieces.  Sprinkle with fresh ground pepper if you like  and more chili flakes, or any condiments of choice.
