Kale Salad with Blue Cheese and Pomegranate seeds




Ingredients


1 medium bunch of Kale
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
pinch of black pepper
pinch of chili powder or hot sauce ( optional )
2 tablespoons pomegranate seeds
2 tablespoons blue cheese crumbled



Method


Clean the kale, separate the greens from the veins and stalks.  Keep the greens.  Discard the stems and stalks.
Tear the greens into bite size pieces and put in a salad bowl.

In a small bottle add the oil, vinegar, salt, pepper and hot sauce.  Close the bottle and shake well till mixed and creamy.  Alternatively use a bowl and a whisk.

Pour the salad dressing over the kale and toss well so all leaves are covered.

Sprinkle with the blue cheese and the pomegranate seeds and enjoy.  The longer it sits the more flavorful the salad gets.
